Vapor entering the helmet expands allowing the vapor to slow down and cool slighting creating passive reflux and increasing the quality of distillate by increasing the distilled ABV and removing sulphides from the vapor. This makes for a smooth spirit, removing bitterness from the sulphides produced during fermentation. Traditional whiskey helmets help with blending of spirit vapor to give final spirits a unique flavor profile. These copper helmets can also be used when making other spirits like brandy where flavors carry over and uniqueness is essential.
