Columns are filled or “packed” with a material that allows rising vapors to contact descending condensate. The more vapor liquid contact the better the separation od alcohol and water. Copper will interact and bind with sulphates removing it from the distillate making for a smoother spirit. Sulphates make the spirit taste bittler. During distillation, the copper acts to reduce sulphury aromas in the resultant spirit by reducing the levels of sulphur compounds such as dimethyl trisulphide (DMTS).
